Pumpkin Protein Chia Pudding

Fall Inspired Pumpkin Protein Chia Pudding (Vegan or Paleo, GF)

This recipe is easy, clean, and delicious for breakfast or dessert. I used Rootz Nutrition Superfood Protein Powder:

Ingredients:

– 1 cup of coconut milk, 1 cup of unsweetened vanilla almond milk

– 1 serving of Rootz Paleo Protein 

– 1 cup of organic chia seeds

– 1/3 cup of organic canned pumpkin 

– 2 tsp of organic cinnamon

– 1 tsp of organic maca powder (I use Navitas Organics)

– 1 tsp of vanilla extract

Instructions:

First, in a blender, blend coconut milk, almond milk, protein powder, maca, cinnamon together. Pour in tall mason jar and add chia seeds. Close the jar and shake everything together. You can also mix everything together by hand if you don’t have a blender! Pop in fridge overnight and enjoy fall in your mouth!
